Sugarcreek Brine Area Positions
Full Time Position
Reports to the Plant Supervisor. The Sugarcreek Brine area consists
of the Wash Room, Brine Area, Wrap Line and the Drip Room. These
areas play an integral part of the cheese making process from the
Make Room to the Cutting Room. All employees should be interchangeable
at any position. They may also volunteer to work on Sundays to receive
milk.
Tasks/Duties:
1. Application and removal of presses on Uniform Cheese Molds (UCMs).
2. Moving of UCM’s both empty and full of curd by pushing/pulling.
3. Cutting press curd in approximately 200# blocks to be submersed
into the Brine.
4. Lifting with assistance of hoist and submersion of curd blocks
into the Brine.
5. Identification of vats on curd blocks in the Brine.
6. Complete and thorough cleaning of empty UCMs with the aid of
a power washer.
7. Correct lining of the UCMs with the appropriate netting.
8. Filling/distribution of curd in the UCMs which allows for the
least amount of loss.
9. Removal of the curd Swiss blocks from the Brine and wrapped,
boxed and stacked on pallets for entry into the Cellars for aging.
10. Enter the necessary information in the Matrix Inventory system.
11. Safe operation of fork lift to place the pallets in the Cellars
for aging.
12. Follow all Guggisberg Good Manufacturing Procedures (GMP’s).
13. Follow all Guggisberg Safety regulations.
14. Work as a member of a Team to accomplish the department goals
and work in a timely manner.
15. Perform sanitation duties for this department and others.
16. Properly receive bulk chemicals for storage.
17. Perform any tasks necessary to ensure a Safe Quality Food product
is produced.
18. Perform any and all related duties as may be required or necessary.
19. Work with the Plant Supervisor to meet annual goals of production,
special projects and any jobs deemed necessary.

Director of Research and Development
Full Time Position
Focus on product development of new and existing products, yield
enhancement. Should have cheese experience or a good understanding
of milk and its components. Prefer natural cheese experience. Prefer
a Masters in Food Science or Microbiology.
